Description
In the western world during the late medieval period and renaissance, Grains of Paradise (Aframomum spp.) had a wide range of uses including home remedy, flavouring food and drinks such as Hippocras. Then as now, these seeds were very rare and highly valued.
The seeds taste strongly of ginger and cardamom, with a peppery pungent flavour. In cooking they can be ground like peppercorns or treated like cardmom – frying off or pounding with other spices to create a blend.
