The seeds of the Ajowan ( Carum ajowan, rachyspermum ammi, Carum copticum) plant have a very strong Thyme flavour and can be used in any number of recipes (sparingly – they really are strong). The seeds often also go by the name Bishop’s weed which is confusing for those researching medieval culinary flavour profiles.

The plant Bishop’s weed – as described in medieval receipts- is most likely Ground Elder or Gout weed, also known as Carum seed and Herb Gerard (Aegopodium podagraria). Today this plant is considered an invasive pest for gardeners however, it has a long history of both medicinal and culinary uses and is still used today.

Ammi majus L. also Bishops weed is apparently related to Trachyspermum ammi, Carum copticum or Ajowan
